“Great food is as a work of art…” so says Giovanni Caracciolo, the new, recently appointed Executive Chef for the Caprice restaurant at Limassol’s Londa Hotel. And Giovanni should know; the talented Italian Chef has hot-footed it to the Caprice from La Scala Opera House in Milan, via Capana in Athens’ Kolonaki district, to bring an air of authentic Italian passion to the Caprices’ new creations. The menu has been renewed and refreshed and already the tasteful and tasty creations are generating enormous positive attention.

Giovanni’s love affair with food began from a very early age; at 8 years old he was happier preparing traditional French onion soup in his mother’s kitchen than playing with friends; by the time he left school at 18 he was determined to be a chef. His hard work and dedication paid off and by the tender age of just 23 (a mere novice in gastronomy circles), Giovanni was appointed 2nd Chef at one of Milan’s most celebrated 4-star establishments. “The Executive Chef at the time was 65, so yes, I guess it was quite an achievement.”

Giovanni’s philosophy for creating delicious food, “It must be simple, beautiful, tasty,” has become the Caprice mantra. “I want my team to ‘feel’ the food, not just prepare it.” The menu may be new but it remains traditionally and authentically Italian, using only the finest ingredients with all foods freshly prepared on site. New additions include ‘Aubergine soufflé with caprino cheese fondue and sautéed langoustine in basil,’ ‘Ravioli with bufala, butter and marjoram on a cream of pistachio,’ ‘Chicken breast, in a sweet and sour sauce, with pine kernels, raisins and fresh spinach’ and of course the beloved pasta and risotto dishes Italian cuisine is renowned for, ‘Risotto a la Milanese’ just one of the classics on offer.

Jochen Niemann, general manager at the Londa Hotel is delighted with the changes introduced by Chef Giovanni. “Our Caprice guests are very happy with the new menu; Giovanni’s natural flair and creativity in the kitchen has already made a dramatic impact.”
